Blend the almonds, garlic, bread, olive oil, vinegar, salt, pepper and water to a very fine texture. Cut the cheese into pieces the same size as the pieces of grape. Cut the grapes into quarters, removing the seeds. Mix the grapes with the cheese and a drizzle of olive oil. Assembly Place the ajoblanco in a small bowl or drinks glass with the cheese and grape salad in the middle. Notes One option for winter is to substitute the ajoblanco with a warm vichyssoise and use nuts instead of grapes. Tip To obtain a finer texture, the almonds can be boiled for 15 minutes and left to cool.
