Red Leicester with grapes and pea hummus

Break off irregular chunks of cheese with the tip of a knife. Cut the grapes in half and remove any seeds. Peel the carrot and, with the same peeler, slice off thin ribbons lengthways. Set aside the carrot ribbons in iced water. For the hummus, blanch the peas for 5 minutes in boiling water, cool and blend with the rest of the ingredients to a very fine texture. Make a bed of pea hummus in the middle of the plate and arrange the carrot slices, chunks of Red Leicester and grapes on top. Finish by drizzling on a few drops of olive oil.   Notes You can substitute the pea hummus with another already prepared hummus.
