Halloumi and lamb skewers with red pesto

Method Cut the cheese into dice. Cut the lamb and courgette into pieces the same size as the cheese. Mix these ingredients with the olive oil, salt, pepper and oregano. Marinate for 30 minutes (or overnight, or even cook immediately) and assemble the skewers alternating the ingredients. Blend the ingredients for the red pesto. Brown the skewers in a pan over a high heat until golden brown, then lower the heat and cover to finish the cooking of the lamb. Serve the skewers with the red pesto and lightly toasted pita bread. Notes The cheese browns quickly, so care needs to be taken when cooking the skewers Tip The skewers can be served with a salad and lightly toasted pita bread
