Roasted sweet potato with avocado, red onion and Margalet

Peel the sweet potatoes, cut into 1 cm slices and brush them with oil. Roast the sweet potato at 190ºC for 20-25 minutes or until soft. Cut the cheese into wedges. Cut the avocado into dice. Cut the red onion into very thin strips. Cut the pepper into thin strips. Mix the avocado, onion and pepper, and season with the lemon juice, olive oil and salt. Place a piece of sweet potato on an appetiser dish and spoon on some salad. Top with a wedge of cheese. Tip Place the onion in a colander and wash under the tap to soften it
