Peel the sweet potatoes, cut into 1 cm slices and brush them with oil. Roast the sweet potato at 190ºC for 20-25 minutes or until soft. Cut the cheese into wedges. Cut the avocado into dice. Cut the red onion into very thin strips. Cut the pepper into thin strips. Mix the avocado, onion and pepper, and season with the lemon juice, olive oil and salt.
