Method Cut the cheese into thin slices. Assemble the sandwich by placing a layer of sobrasada, a drizzle of honey and the cheese on one of the slices of bread. Place the other slice on top and cook in a frying pan or griddle over a medium heat on both sides until golden brown, pressing down on the sandwich with a spatula.
