Preparation

Peel and grate the potatoes, season with salt and leave to stand for 5 minutes. Blend the ingredients for the green mojo. Form the grated potato into röstis by squeezing with your hands to eliminate moisture and cook them on both sides in a pan with oil over a medium heat until golden brown and the potato is cooked. Serve the röstis hot with the cheese on top and the sauce in a separate bowl.

Notes

They can be browned in a pan and heated in the oven before serving.
