For the creamy Gruyère, chop the cheese and blend with the water, oil and salt to a very fine texture. Slice the nuts crosswise. Toast the bread, spread with the creamy cheese mixture and finish by sprinkling with the sliced nuts and herbs.

Notes

For a more delicate presentation, place the creamy cheese mixture in a piping bag to make peaks on the bread.
