Method Cut the melon into dice. Blend the rest of the melon with the lemon and ginger, and season with salt and pepper. Cut 10 g of Gorgonzola into dice. Blend the rest of the Gorgonzola with the yoghurt and set aside. Mix the melon dice and Gorgonzola and drizzle with olive oil.

Assembly: In a shot glass, pour in a layer of the Gorgonzola mixture and top up with the melon soup. Finish by arranging the melon and Gorgonzola pieces on top.
